Stability

Stability describes how well a compound keeps its original chemical structure over time when exposed to things like heat, light, moisture, or changes in pH.

Where the word comes from

“Stability” traces to Latin stabilis, “standing firm,” from the verb stare, “to stand.” The ending -ity turns it into the name of a state, so the word literally means “the quality of standing firm.” Chemists adopted it for a substance’s resistance to change: a stable compound is one that stays what it is.

What it means here

A peptide that has broken down is no longer the molecule a study set out to test. So labs measure stability with stress tests: they expose a compound to harsh conditions on purpose, then use tools like HPLC and mass spectrometry to count what degraded and identify what it degraded into. One published study of an alpha-MSH analog mapped fourteen distinct breakdown products this way. Stability is also why research peptides ship lyophilized — a freeze-dried powder degrades far more slowly than the same peptide in liquid.
